The Tree Makes All The Difference
You can't use just any tree! There are only 3 maple trees native to Canada that are able to be used for their sap. Sugar maples are the biggest producers of syrup, but red maple and black maple are also tapped as well.

 Maple Syrup is a craft all its own

There's actually quite a lot that goes into the bottle that you buy from the supermarket. It takes about 40 liters of sap to make one liter of syrup, and most trees only produce about 50 liters of sap during the season when they're tapped. The sap can also only be tapped during the late winter/ early spring, so there's a very finite amount of time when trees can be tapped for their sap.
