A Mother’s Day brunch is the perfect (and most delicious) way to show your appreciation for all of the incredible mothers in your life. After all, there’s no better way to celebrate than with a tasty meal. While you’re at it, why not make it nourish both body and soul? For this Mother’s Day, we’ve gathered a list of our favorite healthy brunch options to make your celebration unforgettable!
1. If you want a sweet and warm breakfast staple, these Banana Oatmeal Pancakes are just the thing!

Ingredients:
2 medium ripe bananas (with brown spots)
2 eggs
1/2 cup unsweetened almond milk
1 teaspoon vanilla extract
1 ½ cups old fashioned rolled oats (gluten free if desired)
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
Olive oil, for cooking
Instructions:
Add all ingredients to a blender and blend on high until completely smooth (30 seconds–1 minute). Let the batter sit while you heat your pan.
Lightly coat a griddle with oil and place over medium heat. Once hot, add 1/3 cup batter per pancake and cook for 2–4 minutes until puffed and bubbles form at the edges.
Flip and cook until golden brown on the underside. Lower heat if pancakes brown too quickly.
Wipe skillet clean and repeat with more oil and remaining batter. Makes 9 pancakes (serves 3, 3 pancakes each)

Ingredients:
10 large eggs
⅓ cup milk or cream
¾ teaspoon kosher salt
Fresh ground black pepper
½ cup Parmesan cheese (plus more for topping)
2 tbsp olive oil
1 red onion (sliced)
2 cloves garlic (minced)
8 ounces fresh mushrooms (sliced)
8 ounces spinach leaves
Instructions:
Preheat oven to 400°F.
Whisk eggs, milk, salt, pepper, and Parmesan in a bowl.
Heat olive oil in a skillet, sauté onions and mushrooms until browned (about 8 minutes).
Add garlic and cook for 1 minute. Add spinach and cook until wilted.
Pour egg mixture into skillet, ensuring even distribution.
Cook over medium heat until the bottom sets and lightly browns (5–7 minutes). Sprinkle with more Parmesan.
Bake in the oven for 10–15 minutes until the top is puffed and slightly browned. Let rest 10 minutes before serving

Ingredients:
2 tbsp extra virgin olive oil
1 medium yellow onion, diced
1 red bell pepper, diced
1 small zucchini, quartered
3 garlic cloves, sliced
1 ½ tsp ground cumin
1 tsp paprika
¼ tsp ground ginger
½ tsp red chili flakes (optional)
1 (28-oz) can crushed tomatoes
1 cup fresh spinach, chopped
¼ cup fresh cilantro, chopped
Salt and pepper to taste
6 large eggs
⅓ cup crumbled feta cheese
Instructions:
Heat olive oil in a deep non-stick pan over medium heat. Add onion, bell pepper, and zucchini; cook 5 minutes until onion is translucent.
Add garlic, cumin, paprika, ginger, and chili flakes; cook 1 minute.
Add crushed tomatoes, spinach, and cilantro. Season with salt and pepper, stir, and bring to a simmer.
Make 6 wells in the sauce and crack eggs into each. Cover and cook 5–8 minutes, until eggs are done to your liking.
Garnish with feta and extra cilantro. Serve with warm pita or toasted bread
4. This Raisin Apple Amish Baked Oatmeal is a great option for brunches with lots of mothers attending! Just bake it and dole it out into as many bowls as desired.

Ingredients:
1 apple, peeled and diced
1/2 cup raisins
1 1/2 cups rolled oats
1/2 cup brown sugar
1 egg, beaten
1/4 cup oil or applesauce
1 cup milk
1 tsp baking powder
1/2 tsp cinnamon
Instructions:
Place diced apples and raisins in the bottom of a greased square baking dish.
In a large bowl, combine remaining ingredients and stir well.
Pour oatmeal mixture over apples in dish.
Bake at 300°F for 30 minutes.
Allow to cool 10 minutes before serving in bowls. Drizzle with additional milk if desired
